Evelyn Josephine “Jo” Roth, 89, was born in Lafollette, TN, to Robert and Zola Kite and passed away on June 25, 2019, in Stillwater, OK. She graduated from high school in Oak Ridge, TN, and received the bachelor’s degree from Berea College in Kentucky. In 1954, Jo and Lawrence “Larry” Roth were married. To this union, two children were born, Richard and Karen. Jo was a Registered Dietitian and worked as a consultant for Project Heart in Stillwater as well as in numerous community nursing homes and small hospitals in Central Oklahoma. She spent countless hours creating and perfecting recipes. Following their retirement, Larry and Jo traveled to many countries throughout the world. Jo was preceded in death by her husband, her parents, sisters Cordia Sweat, Anna Mae Medlin, and Rose Kite and brothers Cecil, Basil, and Kenneth. She is survived by her son, Richard (Sara) and daughter Karen Sebring (Keven McVay), four grandchildren, her sister, Betty Ziemke, and her brother, John.
